How Much Yeast for Pizza Dough
Yeast is the gas pedal for dough timing. The right amount depends on time, temperature, flour, salt, and whether a preferment is already doing part of the work.
Think in IDY equivalent
Pizza Dough Pro stores yeast as instant dry yeast equivalent because it gives a stable baseline. Fresh yeast, active dry yeast, and instant yeast can all raise dough, but they are not equal gram-for-gram. Instant and active dry can behave similarly in long ferments once active dry is hydrated, while fresh yeast is much wetter and is usually used at about three times the instant yeast weight.

Typical IDY starting ranges
These are starting points, not laws. A warm kitchen, warm dough, or weak refrigerator can make a small yeast amount move quickly. A cold dough, high salt, or very cold fridge can slow the same formula down.
- Same-day room-temperature dough: about 0.10-0.25% IDY.
- 24-hour cold dough: about 0.05-0.10% IDY.
- 48-hour cold dough: about 0.02-0.05% IDY.
- Prefermented dough: often little or no final yeast unless you need a timing boost.
Time and temperature beat the recipe
Yeast does not read the clock. It responds to dough temperature. A dough at 78F ferments much faster than one at 62F, and a refrigerator at 41F behaves differently from one at 35F. This is why two people can use the same formula and get different proofing results.
The tradeoff
More yeast gives convenience and predictability for same-day dough, but it can blow through the best baking window and leave less time for flavor. Less yeast gives more runway for cold fermentation, but timing gets less forgiving if your fridge runs cold or the dough starts underdeveloped.
- If dough overproofs, lower yeast or shorten the warm time.
- If dough is dense and underactive, add time, warmth, or a small yeast increase.
- For long cold dough, judge readiness by dough expansion and feel, not the recipe title.
When using poolish, biga, or levain
A preferment already carries fermentation into the final dough. Adding final yeast can be useful if you need reliable timing, but too much can mute the preferment's character and push the dough too fast. Start with no final yeast or a very small amount, then adjust after you see how the schedule behaves in your kitchen.
